This simple bruschetta is filled with fresh flavor, largely due in part to the fresh tomatoes, prominent fresh basil, and oregano. Red peppers, onion, and balsamic vinegar help to round out the flavors. It screams summer. Serving it on top of a baguette and melting with a little cheese makes it a tasty summer appetizer that can be prepared in a snap.

Ingredients For simple bruschetta

4 mdtomatoes, chopped

1/2 smonion, chopped

1/2 smsweet red bell pepper, chopped

1 bunchfresh basil, chopped

2 clovegarlic, chopped

3 Tbspbalsamic vinegar

3 Tbspextra virgin olive oil

1 tspcoarse sea salt

1 tspcoarse ground black pepper

1 tspfresh oregano (or 2 tsp dried)

1 mdloaf French bread cut into 1 inch slices

8 ozmozzarella cheese, grated

1/4 cgrated Parmesan cheese
How To Make simple bruschetta

1Preheat oven to 350 degrees F. Mix all ingredients except cheese and bread in a mixing bowl. Set aside and let flavors blend.

2Toast bread by spreading the sliced baguette on a baking sheet. Place it in the 350 degree oven for 5 - 7 minutes or until slightly brown.

3Raise the oven temperature to 400 degrees F. Mix mozzarella and Parmesan cheeses.

4Spoon the tomato mixture onto the bread.

5Drizzle with juice (tomato, oil, vinegar) from the mixing bowl.

6Top with cheese. Continue until all ingredients are gone.

7Place in oven at 400 degrees for 20 minutes or until cheese is melted and golden. Remove and serve!
