When I was a kid, my mom would take us to Friendly's. I would always get the peanut butter sundae. It was two scoops of vanilla ice cream, hot fudge, peanut butter sauce, crowned with an upside down sugar cone, a whipped cream border, and studded with Reese's pieces. OMG! I always wanted a giant one, now my peanut butter loving friends, I present to you my version of that little girl's sundae. This was actually my birthday cake this year. Yes, I'm a loser that makes her own birthday cakes.

Blue Ribbon Recipe

If you grew up going to the famous restaurant chain for the delicious sundae, this peanut butter ice cream cake mimics the flavors and is delicious. Creamy vanilla ice cream sits atop a peanut butter cookie crumb crust. It's topped with a homemade peanut butter sauce (that you can use on a bowl of ice cream too) and drizzled with chocolate sauce. Peanut butter candies on top pack the last punch of peanut butter flavor. Easy to prepare, this is a great summertime treat. The hardest part is waiting for the cake to firm up in the freezer.

    peanut butter
  • 2 Tbsp
    butter
  • 2 tsp
    granulated sugar

How To Make ice cream cake (peanut butter sundae)

  • Crush peanut butter cookies and let ice cream come to room temperature.
    1
Let the ice cream get soft enough to smooth with a large spoon. In a bowl or resealable plastic bag, crush the cookies.
  • Mix the crumbs with butter and press into a springform pan.
    2
Mix crumbs with the melted butter until it looks like wet sand. Put in the bottom of a springform pan (cheesecake pan). Push into sides and bottom. This is the crust of the ice cream cake.
  • Add ice cream to the pan and spread.
    3
Dump in the ice cream and smooth into sides and holes with a big spoon. Now put it in the freezer while you make your peanut butter sauce.
  • Put the peanut butter, butter, and granulated sugar. Slowly melt in the microwave.
    4
Put the peanut butter, butter, and granulated sugar for the sauce in a bowl in the microwave. Cook for about 20 seconds at a time, stirring after each time until it's all melted together. Make sure you don't do it too many times or it will burn. Let it cool for maybe a minute.
  • Spread peanut butter sauce over the ice cream.
    5
Take the cake back out of the freezer. Spread the peanut butter sauce over the ice cream. Place back in the freezer to let the first layer get cold and set up before adding chocolate.
  • Drizzle with chocolate.
    6
Once set up, drizzle the chocolate.
  • Top with chocolate peanut butter candies and freeze.
    7
Top the last layer with candy before you put back in the freezer to finish setting up.
  • A slice of Ice Cream Cake (Peanut Butter Sundae) on a plate.
    8
    Unmold and slice.

******OPTIONAL****** To make it look more pleasing to the eye, wait until it freezes up completely. Let it sit out for 10 minutes and then unmold it. Frost the sides with whipped cream like you would a cake and let that freeze up too!
