I love sauerkraut cooked in brown sugar. I love it sweet with just a hint of sour. This recipe is the same. Cabbage and peppers with vinegar and sugar give it that sweet and sour flavor. The cabbage gives it a slight crunch, though, unlike kraut. This is known as 'Amish Slaw or Pickled cabbage' as well. It goes great with anything BBQ! I love it on a pulled pork sammie. I have used my food processor to chop the ingredients and I have done it by hand. Either way will work as long as you cut everything fine.

This Amish slaw is perfect for cookouts because there is no mayonnaise in this side dish; it's a vinegar-based coleslaw. We loved the balance of sweet and tangy flavors from the sugar and white vinegar in the dressing. Celery seed and mustard seed also add to the flavor. The shredded cabbage, chopped bell pepper and onion soak up the dressing, but remain nice and crunchy. Serve this slaw as a side dish or use it as a topping for a hot dog, burger, or pulled pork sandwich.

How To Make pepper cabbage aka amish slaw

1Prepare the cabbage, red bell pepper, and onion.

2Combine cabbage, red bell pepper, and onion in a bowl.

3Mix sugar, vinegar, mustard seed, celery seed, salt, and pepper. Pour over cabbage mixture. Stir to combine.

4Chill overnight or for several days. Keeps well in refrigerator.
